Double Chocolate Cherry Cookie Bars

Double Chocolate Cherry Cookie Bars
Ingredients
½ cup butter (softened)
½ cup sugar
½ cup brown sugar
1 teaspoon vanilla
1 egg
1 ¼ cups all purpose flour
¼ cup unsweetened cocoa powder
½ teaspoon baking soda
½ teaspoon salt
¼ teaspoon baking powder
¾ cup dried cherries
½ cup chocolate chips
Instructions
Preheat the oven to 350°F.
Lightly grease an 8 × 8-inch baking dish and set aside.
In a medium bowl, whisk together the flour, cocoa powder, baking soda, salt, and baking powder. Set aside.
In a large bowl using a hand mixer, cream the butter, brown sugar, and sugar together for 1 minute.
Add the egg and vanilla extract and beat for an additional 1 minute.
Add the dry ingredients and mix until just combined.
Stir in the dried cherries and chocolate chips on low speed until evenly distributed throughout the dough.
Spread the dough in an even layer in the prepared baking dish.
Bake for approximately 20–25 minutes, or until the edges are set and the center is only slightly jiggly.
Allow the bars to cool completely in the pan on a wire cooling rack before slicing.
Makes 16 bars.
